Combine sugar and brewed Starbucks® Spring Day Blend coffee in a heatproof bowl. Stir.

Once sugar is dissolved, allow to cool and add vanilla extract.
If starting with cold or room-temperature coffee, heat sugar and coffee together in small saucepan or microwave, stirring occasionally or until sugar is fully dissolved.
Store in a container in refrigerator until ready to use.
Slice and juice the lemon.
Using a vegetable peeler, twist the fruit as you cut for approximately a 1-to 2-inch-wide piece of the peel to zest. Slice the lemon in half and juice each half in a small bowl.
Fill a tall Collins glass with crushed ice, Coffee Vanilla Syrup and lemon juice. Top with soda water and stir to combine. Garnish with lemon zest and enjoy.
